Bean Thread Noodle Salad with Heaps of Veggies

Not only is this A salad, but it’s exactly how I like my salad. Full of bright colors and not skimpy on the vegetables. This salad uses the Asian bean thread noodle also called cellophane noodles and glass noodles. They can be found at Asian markets or Asian aisles of your grocery store.

 

Although bean thread noodles are almost invisible looking that doesn’t mean they are devoid of calories or nutrients. Bean thread noodles are made from the flour (starch) of mung beans. Therefore they are a great source of carbohydrates, small amount of fiber, and even Iron. Enjoy these for a post workout meal to reap the benefits of the carbohydrates.

I decided to add these noodles to one of my loaded veggie salads and they were super easy to prepare. Place them in a large bowl and add in any of the veggies you’d also like steamed, like broccoli and thick shredded carrots. Bring water to a boil in an electric tea kettle or on the stove and once boiling, pour over the noodles and vegetables to cover. Let them sit in the hot water bath for 5 minutes and then drain the water.

Add to your salad any fresh, delicious, colorful veggies you have on hand. I used some leftover steamed squash, green cabbage, cucumber, red onion, carrots, cilantro, red cabbage and apple sauerkraut, and broccoli. I used a little tamari and Shitake Ginger dressing for the sauce.

 

Add everything to a bowl and toss to coat. I hope you love and savor every bite of this. Cheers!
